Most people don’t spend much time thinking about where their chicken came from, let alone what they ate in life, but feeding practices on large farms are bad for the environment and result in boring, unhealthy chickens. Today’s guest is Matthew Vadiak, Chef, Founder and CEO of Cooks Venture, whose goal is to create a new breed of broiler that is more active, more varied and more flavorful. Through regenerative farming and selective breeding, Cook Venture Farms in Arkansas has produced chickens that are more heat tolerant and can eat a variety of grains. As a chef and former co-founder of Blue Apron, Vadiak is committed to trying to change the food system for the better.
